Add a handful of cubed lime and 1 heaped teaspoon of demerara sugar.
Crush the sugar into the lime with the end of a bar spoon.
Add 20ml of sugar syrup and muddle with the lime and sugar.
Slap a handful of mint leaves and stir in.
Add the crushed ice and 50ml of Spiced Rum.
Top up with ice cold soda water, stir in well and decorate with a lime wedge and mint leaves.
50ml Cape Cornwall Spiced Rum

20ml Sugar syrup
1 tsp Demerara sugar
1 Mint sprig
Crushed ice
1 Can of soda water
